Vegan Recipe for Burdock- A Great and Healthy Snack

Burdock is a scraggly dirty looking root. It makes you wonder -How in the world do I eat this? Does this even taste good? Don’t worry, all of your questions will be answered in this post.

Burdock is full of fiber and is a natural blood purifier.

What does Burdock Taste Like?????

Burdock typically takes on any flavor you cook it in, but it does have a meaty texture that makes it a great substitute for any meat. The recipe below gives the burdock a sweet and salty taste while it remains a crunchy and meaty texture. It is a really great meal!

 Vegan Recipe For Asian Style Burdock Roots


Burdock Roots

1/4c sesame oil

1/2c coconut aminos

1 Tbs of sesame seeds

2 Tbs maple syrup

1 Tbs temari miso (optional)

When you buy:

Pick out 4 firm, relatively straight roots.

To Prepare to Cook:

Wash thoroughly,

Peel off all the skin,

It is OK if there are some skin left behind,

Wash again,

Cut directly down on the root to get circular shaped pieces,

make sure that the cuts are at most 1/2 an inch.

When Cooking:

Take a large pan out and put all the ingredients in it. Place pan on stove at medium heat. Let it simmer for 1/2 hour to 40 minutes.
