Got a bunch of carrots, beets, and radishes lying around and have no idea what to do with them? Well, here is a delicious recipe that turns those roots into a gorgeous salad that satisfies your sweet tooth!
Tri-Root Salad (serves 4)
2 medium beets Julienne cut
1 medium or 2 small radishes (use watermelon radishes for a milder spicy flavor) Julienne cut
a handful of chopped parsley
2 Tbs maple syrup
Juice the two lemons into a bowl and add the parsley and maple syrup. Then add the beets, carrots, and radish into the bowl. Toss until the ingredients are mixed well.
